Mama ‘Funke’s Efo (Spinach Soup)

Ingredients:

1 lb. chicken
3 cups water
2 lbs. fresh spinach, finely cut
¼ cup palm oil
1 large red onion, diced
2 tomatoes, diced
3 tablespoons dried crayfish (or shrimp)
Pinch of salt
½ teaspoon of crushed pepper

Cooking Steps:

Cut chicken into small pieces. Add water, salt to taste and boil until tender, permitting water to evaporate completely. While chicken is cooking, wash spinach thoroughly and cut finely. Dice onions and tomatoes. After water has totally evaporated, add palm oil, onion, tomatoes, crayfish, salt, and crushed pepper. Cook over a moderate heat for 5-10 minutes. Then add spinach and continue cooking, until done ( about 3-5 minutes); add no water. Serve with either hot rice or roasted plantains.
