Southern Red Beans and Rice with Andouille Sausage

Melvin’s Red Beans and Rice

Ingredients:

1 pound dried red beans, soaked in water overnight
½ pound salt pork, sliced
1 whole onions, chopped
½ green pepper, chopped
2 tablespoons garlic, chopped
Dash of ground thyme
Dash of basil leaves
1 tablespoon minced fresh parsley
1 bay leaf
1 pound of chopped smoked sausages
½ pound of sliced hot sausage
Salt & pepper to taste

Cooking Steps:

Fry salt pork in a Dutch oven until done. Add onion and green pepper; sauté until tender. Add drained red beans, garlic, thyme, basil, parsley, and bay leaves. Add enough cold water to measure 1 inch above beans. Cook on medium heat for 1 ½ hrs. (add more water if needed). Removed bay leaves. Add smoked sausage and hot sausage to beans. Stir and continue to cook on medium to low heat until beans become creamy, stirring frequently. Add salt and pepper. Serve over rice. Yield: 6-8 servings
