Ingredients:
1 large eggplant
1 tablespoon olive oil
2 garlic cloves, minced
1 medium onion, diced
4 tablespoons of bread crumbs
2 tablespoon of un-cooked quick oatmeal
1 teaspoon onion powder
1 teaspoon of cumin
Salt and pepper to taste
Oil for frying
Cooking Steps:
Cut the eggplant in half, place it on an oven tray and brush it with olive oil. Sprinkle some salt and pepper on top and roast it in the oven at 450° for 20 minutes. When it’s ready, scoop out the insides and mash by hand or put into a blender. Add the rest of the ingredients to the eggplant and mash together. Leave in the refrigerator for 1hr. Shape into patties and fry lightly on both sides, until they are deep brown and crusted on the outside. Move them on a paper towel to drain off excessive oil. Yield 4-6 burgers
